材料:鸭蛋、鸡蛋、干瑶柱、虾干,还有新鲜的本土韭菜。
做法:将韭菜洗净切小段,干瑶柱和虾干提前用清水浸泡,鸭蛋2个,鸡蛋3个,打碎用筷子快速打太多,有泡沫就可以了,放小半碗凉开水,为了使蛋吃起来嫩滑,把盐放进蛋液里,热锅里把瑶柱和虾干爆炒装碟等用,炒起来好香的咸海味,炒好后一起放进蛋液里,最后放韭菜,再放一点点盐即可,就可以开炒了,注意一起要小火,不断的要翻炒,要不容易焦了,一旦蛋老了就不好吃了。有时简简单单反而好。适合上班一族的快手菜。
本地韭菜比较细小,但有韭菜味。
