猪脑3个,芦荟鸡蛋5个(约170克),温水340克,油、盐、白胡椒粉适量,姜一大块

做法:
1.处理猪脑,挑去表面薄膜,血丝就会一起拨起。处理好的猪脑灼水2分钟,9成熟左右。灼水时放下一大块姜,去腥。灼完水后的猪脑切成小块平铺在蒸碗底备用。

2.鸡蛋在大碗里打散,下盐、油,白胡椒粉,和匀。慢慢倒下温水,兑开和匀。

3.蛋液过筛,滤进装有猪脑块的蒸碗里。

4.锅里水烧开后,转中火隔水蒸12分钟左右,凝固即可。

Tips:
蒸鸡蛋香滑嫩,我的秘诀是,
1.鸡蛋与水的比例是1:2,用温开水温开水温开水!
2.蛋液过筛过筛过筛!
3.蒸的时候要中小火中小火中小火!
4.蒸蛋的器皿要玻璃或陶瓷,不能用不锈钢或铁!否则蛋蒸出来会发黑。
