腌鱼调料:
葱、姜片、盐、料酒、辣椒面、花椒面、孜然粉、酱油、油。
做法:
1、将宰杀干净的新鲜草鱼洗净,剪去鱼鳍,用刀在鱼身两侧开花刀,然后沿鱼骨将鱼部分分开,使鱼分

2、大骨飞水,用高压锅煲。

3、将腌好的鱼放入铺好锡纸的烤盘,垫上葱段和姜片,鱼身刷上油和酱油,撒上辣椒面、花椒面、孜然
粉,放入预热220度的烤箱上下火烤20分钟(中间可以取出再刷一次酱油和油);

4、姜切姜末,蒜切成大块,芹菜去老叶洗净切段,豆瓣酱剁碎,土豆切条用油炸熟;

5、炒锅内放入50克的油,烧至5成热,放入姜末蒜瓣炒香,放入剁碎的郫县豆瓣小火炒香;放入干辣椒

6、加入莲藕、杏鲍菇、香芹菜同煮,断生后加入土豆和豆腐皮煮两分钟即关火;

7、将烤好的鱼去掉姜葱放入一个深盆中(其实也可以一开始就放入这个深盆中),将配菜倒在鱼身上;

8、炒锅洗净烧热,放入2大匙(30ml)的油烧至5成热,放入适量干辣椒花椒炒香(注意花椒和辣椒不要
糊了),趁热浇在烤好的鱼身上,用香菜装饰即可上桌。
