关于夏天的回忆里,这道凉拌毛豆就跟皮蛋拌豆腐一样,作为武汉夏季时令必选菜式,排名绝对靠前。前阵子妈妈在菜场看到了嫩毛豆,于是买回来又做了几次,儿子分外喜爱,全家人都抢着吃。所以我详细跟进了某次制作过程,拍照记录。
1、用剪刀将毛豆两边的角角都剪掉,这是为了方便吃的时候直接用牙齿把里面的毛豆挤出来。

2、将毛豆清洗三次,清洗时用力挤压揉搓外壳,让外壳上的毛毛能掉的都掉下去。第二次洗完可以浸泡一段时间再洗。

3、锅内烧开水,水尽量多一点。

4、水开后倒入毛豆

5、盖上盖子,不到最后千万不能揭开盖子

6、中火煮15-20分钟,具体视毛豆数量而定

7、煮好的毛豆还是绿油油的

8、捞起

9、下面的步骤可以在一个大的碗里或者盆里进行。那天正好没有合适的器皿,于是倒回锅里进行下面的步骤。
趁热加盐翻拌

10、加生抽和麻油翻拌

11、拌好后捞起。如果不是在锅里进行上述步骤,可以省略这步

12、另取葱蒜,锅内加食用油,将葱蒜炒香

13、将毛豆再次倒回锅里,和炒香的葱蒜混合均匀。如果之前是在其他器皿搅拌,则将炒香的葱蒜淋到毛豆上,再搅拌均匀。
