油泼辣子,有的人也叫油辣子,也叫辣椒油,管它名字呢,它们的功能和用法都相近,今天我分享一个比较万能常见又好吃的油泼辣椒做法,做一次可以吃一年!

先去市场买“不辣”中粗的辣椒面,(因为真正好吃的辣椒油应该是“香”而不止是“辣”。

放入大碗中,锅内烧油,快冒烟的时候关火,再少量的加入辣椒面中,新手建议用大勺子来勺,以免控制不好。因为油温太高,一下子倒入就会涨铺出来。油的比例是没过辣椒面的2倍左右。

趋热加入一勺花椒面、2勺黑芝麻增香。干的筷子搅匀在一旁备用。

花生炒后去皮,装入厚一些的保鲜袋中,用面杖擀压碎,粗细不太重要。

等油辣子凉了,加入花生碎,再加入一勺食盐提味及延长保鲜期,不要加过多,因为这毕竟是其中一种调料,加入太多盐,到时你拌菜或做其它时再放盐就会超标也不好吃了。
