八款不用烤箱也能做的甜品

材料简单,成本低,容易整

最紧要喺简单摆盘就能秒杀票圈!

 

南瓜椰蓉小方

▼材料▼

南瓜(老一点的,水份少,甜度高,口感粉糯。)、椰蓉、牛奶、玉米淀粉、白砂糖。

 

▼做法▼

1.南瓜洗净,去籽切块,放入蒸锅蒸熟蒸烂,用勺子碾成泥(倒掉压出来的汁)。

2.玉米淀粉少!量!多!次!加入牛奶(不要太多不然好稀),搅拌至无颗粒,加入白砂糖和南瓜泥,继续搅拌至无颗粒。
3.准备方形保鲜盒,在底部均匀薄薄平铺一层椰蓉。
4.将搅拌好的南瓜牛奶糊倒入小奶锅,小火熬煮,边煮边搅拌,
熬到浓稠状迅速离火,避免糊锅。

5.南瓜糊搅拌至粘稠状,搅动阻力很大,微微凝固时,即可倒入准备好的保鲜盒中,并用勺子压平表面。

 

6.保鲜盒不盖盖,静置自然冷却,完全冷却后盖盖放入冰箱冷藏2小时以上。
7.取出冷藏好的保鲜盒,用刀划过保鲜盒内壁,将凝固成型的南瓜糕,倒扣到铺上椰蓉的盘子中。
切成小方块,再装点椰蓉即可。

【抹茶小方】

 

 

盆栽牛奶布丁

▼材料▼

水牛奶220ML*2、吉利丁粉10g、奥利奥饼干适量、白砂糖适量、凉开水20ML。

 

▼做法▼

1.牛奶注入奶锅中,下适量白沙糖,煮至白砂糖溶解,放到室温。
2.把凉开水20ML注入碗中,下吉利丁粉,拌至溶解。
3.把溶解好的吉利丁液注入牛奶中,拌匀。
4.使用过滤网过滤牛奶布丁液,同时注入容器中,放入冰箱冷藏4个小时以上成型。
5.奥利奥饼干刮掉中间夹心,装保鲜袋内,用擀面杖压碎。
6.取出布丁,撒上饼干碎,种上菜苗,完工。

【蜜桃果冻】

 

 

奥利奥雪媚娘

▼材料▼

糯米粉250g、玉米淀粉60g、黄油70g、牛奶350g、细砂糖80g、奥利奥适量、淡奶油300g、砂糖30g。

 

▼做法▼

1.奥利奥去除夹心,使用擀面杖碾碎成粉待备用。

2.糯米粉、玉米淀粉、细砂糖、牛奶充分搅拌混合。

3.搅拌好的面糊隔水蒸约25分钟,蒸煮好的面团中放入黄油,把黄油充分揉进面团中。揉好后放进冰箱冷藏两小时。

4.淡奶油与白砂糖打发硬性发泡,待备用。

 

 

 

 

5.冷冻好的面团分成25g的小剂子,模具中涂抹上糯米粉,小剂子擀成圆状,放在模具中,包入奥利奥粉和奶油。

6.收口黏和再按平,再撒上炒熟的糯米粉防沾。

7.做好的雪媚娘放进冰箱中冷藏好(都需要盖上保鲜膜,最好是用雪媚娘的固定模具,就不会塌了)

【芒果糯米糍】

 

 

榴莲/芒果毛巾卷

▼材料▼

鸡蛋3只、牛奶250g、面粉50g、白砂糖20g、玉米淀粉30g、抹茶粉1小勺、无盐黄油10g、淡奶油400g、糖粉20g、芒果和榴莲适量。

 

▼做法▼

1.黄油隔热水融化备用。

2.牛奶,面粉,白砂糖,玉米粉倒入一个碗搅拌均匀。
3.鸡蛋打散不结块,把步骤2倒入蛋液里,慢慢搅匀,再过筛一遍。
4.舀出两勺面糊倒入黄油进行乳化,乳化好再倒回面糊里混合均匀。
5.分出一半面糊在另一个碗里,倒入抹茶粉,搅至无颗粒再过筛一遍。

 

6.两味面糊都调好后,就可以煎饼皮。摊饼皮,揭皮的时候用擀面仗辅助一下。

7.4张饼皮依次叠好,中间抹上奶油和榴莲的混合霜,像卷毛巾一样卷好。

8.卷好用保鲜膜定形,切出来美观,冷藏一晚再吃口感更佳!次日从冰箱取出来,抹茶那条再筛上一层薄薄的抹茶粉,好看~

【芒果千层蛋糕】

 

 

酸奶蒸蛋糕

▼材料▼

鸡蛋3只、温氏酸奶150g、葡萄籽油15g、日清低筋面粉75g、糖40g、柠檬汁(白醋)几滴。 

 

▼做法▼

1.分蛋,蛋清放入无水无油的容器,放一旁备用。蛋黄先放一边备用。

2.150克酸奶+15克葡萄籽油混合均匀。(色拉油、玉米油,所有无色无味的油都可以啊,当然葡萄籽油更健康)

3.加上75克低筋面粉拌匀至无干粉。

4.分两次加入蛋黄拌匀至细腻光滑的面糊。

5.打发蛋白,分三次加入40克糖和几滴柠檬汁打发到干性状态。

甜甜圈

面粉、黄油、酵母、鸡蛋两只、白糖、牛奶一盒、盐。

 

▼做法▼

1.在碗内依次加入鸡蛋、牛奶、盐、糖、面粉,搅拌混成面团。

2.面团加入黄油,继续揉搓成光滑的面团。

3.面团醒发至两倍大,排气擀成0.5CM厚的薄片。

4.利用家里有限的工具印出甜甜圈的外形。

5.锅里烧热油,放入甜甜圈,炸至金黄色即可。

鸡蛋4个、低筋面粉80g、纯牛奶80g、玉米油20g、白糖50g、柠檬汁几滴。

 

▼做法▼

1.把蛋清和蛋白进行分离,装蛋清的容器必须无水无油,否则蛋清很难打发成功。

2.蛋黄用手动打蛋器打匀后加入20克玉米油搅打均匀,建议不要用花生油这些味道比较重的油。

3.再加入80克纯牛奶搅拌均匀,将蛋液、油、牛奶完全融合在一起。

4.加入80克低筋面粉用手动打蛋器呈Z字形来回轻轻拌匀,不要转圈搅拌,以免起筋。蛋黄糊拌好后放一边待用。

5.蛋清中滴几滴柠檬汁,用电动打蛋器打发至出现泡沫时,加入三分之一白糖。继续打发,当蛋清泡沫消失,呈现细腻顺滑状态的时候再加入三分之一白糖。继续打发,打发至蛋白比较浓稠的时候,加入最后三分之一白再继续打发,打发至出现纹路时,把打蛋头提起来看一下,呈现直立的小尖角,这样打发就完成了。

 

 

6.用硅胶刮刀取一些蛋白放进蛋黄糊翻拌均匀,手法要轻,从底下像炒菜那样翻拌,不要转圈搅拌以免消泡。

7.把翻拌好的蛋黄糊全部倒入打发好的蛋白中,像刚才那样翻拌均匀,动作要轻要快。这是拌好的蛋白蛋黄糊,看起来光滑细腻。

8.锅的表面刷一层薄薄的玉米油。把面糊装入裱花袋并挤入锅中,盖上锅盖小火煎2-3分钟再翻面煎2-3分钟即可。
