用荠菜做馄饨,直接想到的就是上海人的做法。所以上海青也是必不可少的。

材料:荠菜、小唐菜、猪肉
制作过程:
1、猪肉洗净,去皮切块,放入绞肉机
2、荠菜洗净,放入热水拖一拖,捞起过冷河;

3、剁碎挤干水份备用;

4、上海青洗净,同样热水拖一拖,捞起过冷河;
5、剁碎挤干水份备用

6、把备好的材料放入盆中,加入姜末或姜蓉,调味;

7、包馄饨

8、锅里放水,水开放入馄饨,四分钟左右煮熟捞出,就可以出锅啦。。。

注:包荠菜馄饨,青菜与荠菜的比例很重要,一般青菜3:荠菜1或青菜1:荠菜1或荠菜2:青菜1;
荠菜过一下热水,能更有效的去取苦涩味,带出荠菜的青香,一般十秒即可捞出;
如果在这个馅里面,再加点冬菇、榨菜末或萝卜干末也是很不错的;
