鱼腩1斤左右
鸡蛋2个
椒盐粉15克
淀粉15克
盐,料酒,现磨黑胡椒适量
青红椒各1个
香芹1棵
香葱适量
前期准备:
1.鱼腩让店家处理好剁成约2cm的宽度,下料酒、少许盐、现磨黑胡椒,腌制15分钟备用;
2.青红椒、香芹、葱切好备用;
3.鸡蛋打散,与淀粉混合至无颗粒,形成粉浆。
做法:
1.炒锅倒入适量高度的油(我用22cm的深不锈钢锅),中火加热至冒泡。

2.每一块鱼腩沾满粉浆,下油锅。

3.待所有鱼腩下油锅后,不能翻动,静止2分钟,后关火。

4.把所有的鱼腩漏筛捞起,沥去油份。
