做法:
1、把鱼切片,用盐、味精、生抽,生粉、料酒、食用油、一个鸡蛋清淹15钟待用;

2、把芽菜下锅加点盐炒熟,酸菜用点水煮一下捞起(剩下的水留着下一步煮鱼片),把豆芽放底层再放酸菜。

3,用锅煮点开水(有高汤最好了),放点盐、味精、姜丝调味,水开的情况下快速得把鱼片用手一片一片抓下锅,再放剁椒、豆瓣酱,轻轻的滚一下,鱼片一熟就要起锅,不然就烂了,连汤带鱼倒在盘中,上面洒上香菜和葱。注:这是最关键的一步

4、锅中放油烧热(大概2两油),把花椒、辣椒,蒜末同时下锅暴香淋上,搞定
